A yellowtail may be any of several different species of fish. Most commonly the yellowtail amberjack Seriola lalandi is meant. In the context of sushi, yellowtailusually refers to the Japanese amberjack, Seriola quinqueradiata. Other speciescalled simply "yellowtail" include: Atlantic bumper, Chloroscombrus chrysurus.
